Toss them in a pot with chopped onions, carrots, garlic, seasoning and chicken broth for an easy split pea soup that will warm up any cold day, or coat with olive oil and roast for crispy split peas that make a perfect snack or salad topper.
Directions
Rinse and remove any foreign material from peas.
Stovetop – to prepare 1 lb. dry peas
1. Bring 4 cups water and peas just to a boil; reduce heat and cover.
2. Simmer gently over LOW heat 30 minutes or until peas are tender.
Electric Pressure Cooker – to prepare 1 lb. peas
1. Combine peas, 6 cups water, 1 Tbsp. oil and 1-2 tsp. salt in 6-qt. electric pressure cooker. Cover and lock lid closed, making sure steam valve is in seal position.
2. Set to pressure cook on HIGH for 2 to 3 minutes.
3. Allow pressure to release naturally for 20 minutes, then carefully turn steam valve to venting position to release remaining pressure. Remove lid and drain.
