With lighter skin and a more subtle flavor than dark red kidney beans, these beans make an ideal addition to a wide variety of recipes, and they’re an excellent source of fiber. Add them to your famous chili, or mix with red onions, tomatoes, coconut milk and curry powder for a delectable kidney bean and coconut curry you’ll want to make again and again.
Directions
Rinse and remove any foreign material from lentils.
Stovetop – to prepare 1 lb. dry lentils
1. Bring 8 cups water and lentils just to a boil; reduce heat and cover.
2. Simmer gently over LOW heat 15 to 20 minutes or until lentils are tender. Drain.
Electric Pressure Cooker – to prepare 1 lb. lentils
1. Combine lentils, 6 cups water, 1 Tbsp. oil and 1-2 tsp. salt in 6-qt. electric pressure cooker. Cover and lock lid closed, making sure steam valve is in seal position.
2. Set to pressure cook on HIGH for 2 to 3 minutes.
3. Allow pressure to release naturally for 20 minutes, then carefully turn steam valve to venting position to release remaining pressure. Remove lid and drain.
