A white bean with a slightly nutty taste, Great Northern beans complement a variety of flavors and dishes, and they provide an excellent source of fiber. Cook these beans with diced onions, garlic and bacon and serve with rice for an easy dish that’s sure to satisfy, or mix with chicken sausage, chopped kale, onions, tomatoes, garlic and broth for a quick homemade soup that hits the spot.
Directions
Rinse and remove any foreign material from beans.
Stovetop – to prepare 1 lb. dry beans
1. Soak beans. Choose Quick or Overnight
A. Quick – Bring 8 cups water and beans to a rapid boil. Boil 2 minutes. Remove from heat; cover. Let stand 1 hour; drain and rinse.
B. Overnight – Cover beans with 8 cups water. Let stand 6 to 8 hours; drain and rinse.
2. Cook beans. Bring 6 cups water and soaked beans just to a boil; reduce heat and cover. Simmer gently over LOW heat 1 1/2 to 2 hours or until beans are tender. Drain.
Electric Pressure Cooker – to prepare 1 lb. beans
1. Combine unsoaked beans, 6 cups water, 1 Tbsp. oil and 1-2 tsp. salt in 6-qt. electric pressure cooker. Cover and lock lid closed, making sure steam valve is in seal position.
2. Set to pressure cook on HIGH for 30 to 35 minutes.
3. Allow pressure to release naturally for 20 minutes, then carefully turn steam valve to vent position to release remaining pressure. Remove lid and drain.
