Pearled Barley from Good & Gather™ has a mild flavor and hearty texture that makes it a great addition to a wide variety of recipes, and it’s easy to cook and keep on hand for use whenever you need it. Pair it with beef, diced veggies, potatoes, broth and seasoning for an easy beef and barley soup, or mix with chopped asparagus, grape tomatoes and feta cheese and dress with olive oil for an easy summer salad that’s sure to please.
Directions
Rinse and remove any foreign material from barley.
Stovetop – to prepare 1/2 lb. dry barley (1 heaping cup dry = about 4 cups cooked)
1. Bring 2 1/2 cups water, 1 cup barley and 1/8 tsp. salt just to a boil; reduce heat and cover.
2. Simmer gently over LOW heat 45 minutes or until barley is tender but still chewy.
Electric Pressure Cooker
1. Combine 1 cup barley, 2 cups water and dash salt (optional) in 6-qt. electric pressure cooker. Cover and lock lid closed, making sure steam valve is in seal position.
2. Set to pressure cook on HIGH for 20 minutes.
3. Allow pressure to release naturally for 20 minutes, then carefully turn steam valve to vent position to release remaining pressure. Remove lid and drain.
