Directions
Pancakes
For about 5 (4-inch) pancakes, use 1 cup mix and 3/4 cup cool water.*
For about 10 (4-inch) pancakes, use 2 cups mix and 1 1/2 cups cool water.*
*For a richer flavor and texture, use milk or buttermilk in place of the water.
1. Heat electric griddle to 375°F or skillet over MEDIUM heat. Grease lightly with oil, if necessary.
2. Combine ingredients in a large bowl. Whisk until batter is moistened and slightly lumpy; do not overmix.
3. Pour about ¼ cup batter onto hot griddle for each pancake. Cook about 1 ¼ minutes per side or until golden brown.
Waffles
1. Heat lightly greased waffle iron.
2. Whisk together 2 cups mix, ¾ cup water, 1 egg and 2 Tbsp. vegetable oil until moistened and slightly lumpy.
3. Pour desired amount of batter onto iron.
4. Bake until steaming stops and waffles are cooked. Makes 10 (4-inch) waffles.

Use less water for thicker pancakes; more water for thinner pancakes.
The skillet or griddle must be hot before making pancakes or the batter will stick.
Do not overmix by beating out all the lumps in the batter because the pancakes will become tough.
